Brownie bites


My perfect bite. Brownies have never been my favorite. I like crunch. Plus, chocolate is not my favorite dessert item so brownies don’t usually top my list. But a box of Ghirardelli brownie mix was on sale so I said what the heck, my niece likes them. And then I proceeded to make them this weekend, when my niece wasn’t here, into my idea of the perfect brownie. Two bites. I made them mini-muffin sized topped off with a chocolate disc and one big walnut (though I prefer pecans, walnuts where already in the mix so I didn’t mingle the nuts) and a scant sprinkling of chipotle chili powder and sea salt for good measure. I underbaked them ever so slightly so that when they are eaten straight from the fridge, you get a bit of a fudge center. Yum. If you decide to try it, I followed the instructions on the box for the cake-like brownies (extra egg, less water). I do like these brownies. I might just try them with a homemade brownie recipe next. Maybe. Or maybe not.

I make everything from scratch…except brownies. I can’t find a recipe better than Ghirardelli’s mix! If you find one… we’d love to hear about it :) The sea salt and chile powder sound great!

I’m with you - brownies have never been my thing.
But, other people in the family insist on them sometimes, so I oblige. The Smitten Kitchen recipe for best cocoa brownies is insane + pretty much as easy as a mix, especially if you do the melting butter step in the microwave as some commenters suggest.

Dove Chocolate Discoveries has a Truffle Fudge Brownie Mix that is to die for! I recently made them for a Caribbean themed party; you add 2 tsp dark spice rum (I used Captain Morgan Original) and 1/8tsp Jamaican All Spice (this was a little hard to find, but Ingles has it and it’s called Jamaica All Spice not Jamaican!). I always use the mini muffin tin to make my brownies, for tasting parties and for my family! Always come out nicer looking. If you use a regular pan I suggest putting the brownies in the fridge for a little while it makes cutting so much easier and neater.

I love brownies … when they are good! Otherwise they can be pretty blah and pedestrian, huh?! You sold me on these with the chili powder and sea salt, wish I had one now! :) OH! and the chocolate disk!!! Salivating over here … I will have to experiment now.
