Amy made this while I was visiting and it was perfect. (The photo on her site of the pie she made is, in fact, my piece. And that fork with that strawberry on it, that’s me trying to persuade Amy that the photo she’s taking really does make the pie look as delicious as it tasted. She wasn’t so certain.) It’s so easy to make and very delicious that upon returning home, I made us one, too. The recipe is in this month’s Martha Stewart under the name “Strawberry Lemonade Icebox Pie” but here it is without the meringue and I subbed in the blackberries. (I can’t find the recipe on her site yet.) The graham cracker crust I made with raw sugar and I feel like it made it even a bit crisper and with that delicious brown flavor we do adore. Summer is in full swing.
